I assume the chart shows the 600kg MTOW because, as you said, that's the base configuration. So far as I know, the 750kg MTOW is only available for planes receiving Airworthiness Certificates under the EAB and (maybe) the forthcoming MOSAIC LSA regulations here in the States.
